SUMMARY:Family Dinner: Palestinian Poetry Feast
DESCRIPTION:Join us for a dinner where we do all the cooking! Each month we open the doors between our classrooms and seat 40 guests for a five-course family-style feast\, featuring all the ingredients we’re excited about. And this October we’re hosting another very special dinner\, with Nadia Tommalieh taking the lead. We’re excited to welcome local poet Lena Khalaf Tuffaha to celebrate her new book “Kaan and Her Sisters” with a menu inspired by her writing. This book of poems is about grief\, survival\, displacement\, and intergenerational memory\, following a teacher of Arabic from her origins in Palestine to the cities of the Arab world. It’s a perfect pairing for Nadia’s cooking\, which is itself powerfully informed by memories of Palestine — we can’t wait to taste what comes from this conversation. Pricing includes tip\, a wine pairing with each savory course\, tea or coffee with dessert\, and a signed copy of “Kaan and Her Sisters”.

I am a graduate of the Le Cordon Bleu\, where I mainly focused on French and Western technique\, but I have deep roots in Middle-Eastern cuisine and an enthusiastic\, developed passion for Japanese cuisine. In my travels I seek out to learn something new\, and for me\, the more specific and obscure\, the better. My interests and abilities continue to range out further\, as long as I can do it\, I will teach it. \n\n\n\n\nBOTHELL PCC\n\n\nMonday\, January 8\, 6:00 – 8:00 pm \nREGISTER FOR CLASS  \n\n\n\nBURIEN PCC\n\n\nSunday\, February 11\, 4:00 – 6:00 pm \nREGISTER FOR CLASS  \n\n\n\nCOLUMBIA CITY PCC\n\n\nSaturday\, January 6\, 4:00 – 6:00 pm \nADD TO WAITING LIST  \n\n\n\nEDMONDS PCC\n\n\nMonday\, January 29\, 6:00 – 8:00 pm \nREGISTER FOR CLASS  \n\n\n\nGREEN LAKE VILLAGE PCC\n\n\nMonday\, January 22\, 6:00 – 8:00 pm \nREGISTER FOR CLASS  \n\n\n\nISSAQUAH PCC\n\n\nMonday\, February 12\, 6:00 – 8:00 pm \nREGISTER FOR CLASS  \n\n\n\nREDMOND PCC\n\n\nSunday\, January 21\, 4:00 – 6:00 pm \nREGISTER FOR CLASS

SUMMARY:Benefit for the Palestine Children's Relief Fund
DESCRIPTION:Announcing a benefit for the Palestine Children’s Relief Fund\n  \nIn this time of horror\, we watch Israel commit atrocities day after day\, seemingly without end\, against an entire society in Gaza. It is a dreadful feeling\, to feel powerless to do anything about this new Nakba.\n  \nHere’s one thing we will do: raise funds for humanitarian relief for the children of Gaza.\n  \nThe Palestine Children’s Relief Fund is a highly recommended humanitarian organization that is focusing specifically on the plight of Gazan children. It is well-known to those of us who are active regarding Palestine solidarity. You can look them up here.\n  \nWe are holding a benefit concert to contribute to this fund:\nDATE:             Saturday\, February 3\, 7:00 p.m.\nLOCATION:   Café Paloma\, 93 Yesler (Pioneer Square)\nADMISSION:   $20.00\nADVANCE RESERVATIONS NECESSARY\n  \nMusic will be performed by the House of Tarab\, a Seattle-based\, Arabic music ensemble that performs classic and traditional material from the golden era of Egyptian music. The group also performs music of the Levant (Jordan\, Lebanon\, Syria\, and Palestine)\, and the greater Middle East.\n  \n“Tarab” is an Arabic word that describes a state of emotional transformation and bliss when one is wholly absorbed in music. Musicians: Stephen Elaimy on oud\, David McGrath on ney\, Jane Hall on percussion.\n  \nRESERVATIONS: Café Paloma is a small place with only about a 35-seat capacity. You must call in and reserve a seat: 206 405 1920.\n  \nIT’S A BENEFIT\, SO EXPECT TO SPEND MONEY: We’re sorry\, but this event is not for the broke. The House of Tarab has generously decided to donate their share of the admission charge to the Palestine Children’s Relief Fund—and we will pass the hat in the course of the evening. And\, of course\, you’ll want to dine on the excellent fare offered by Café Paloma. (Note: if you can pay the admission charge with cash\, that helps out the restaurant.)\n  \nThere will be a Palestinian speaker from the Seattle branch of the solidarity organization Samidoun on hand to talk briefly about what is going on in Gaza.

SUMMARY:Flavors of Palestine: Maftoul - Cooking Class
DESCRIPTION:The cold days of winter deserve the warmest of comfort foods and the coziest of gatherings. In Palestine\, that all centers around maftoul\, a traditional Palestinian couscous\, steamed to perfection with olive oil and broth. Paired with tender roast chicken and crowned with a sauce made from tomato\, onions\, and garbanzo beans\, this dish is the ultimate in winter comfort. You’ll enjoy your maftoul with hwerneh bil labaneh (mustard greens fermented with labneh); adas mudamas (mashed brown lentils with garlic\, lemon\, and an array of aromatic spices and herbs); crispy onions; and freshly made pita bread. You’ll finish the meal with asaba’ zeinab (fried semolina macarons bathed in orange blossom syrup). \nPlease note: some classes can be adjusted for students with dietary restrictions\, but many cannot. If you’re vegetarian\, pescatarian\, or gluten-free\, you can use the drop-down menu on our events page to view the best classes to fit your needs. If a class you’re interested in doesn’t appear in that filtered view\, please email us before registering and we’ll see if the class’s menu can be modified. \n

SUMMARY:PCC Cooking Class: Palestinian Levantine Table
DESCRIPTION:Bring the foods of Palestine\, Lebanon and Syria together learning to make Chef Hend’s deep-rooted family recipes. Make handmade Taboon\, a yeasted flatbread that is essential for the table. Build the spice combination to make Musakhan\, a flavorful chicken dish made to serve atop your taboon. For a bite of sweetness\, learn to make Atayef\, pillowy stuffed pancakes that are a delight to celebrate. This class is brimming with unique recipes and essential Middle Eastern ingredients to bring to your kitchen. \nWith dairy\, nuts\, and poultry. \nAbout the instructor: After cooking in Michelin Star restaurants and high volume catering events\, I made a “temporary” switch to teaching cooking classes. However\, the satisfaction and unique experience I received from teaching convinced me that this was my new culinary path. \n\n\n\n\nBURIEN PCC\n\n\nSunday\, February 11\, 4:00 – 6:00 pm \nREGISTER FOR CLASS  \n\n\n\nCOLUMBIA CITY PCC\n\n\nSaturday\, January 6\, 4:00 – 6:00 pm \nADD TO WAITING LIST  \n\n\n\nEDMONDS PCC\n\n\nMonday\, January 29\, 6:00 – 8:00 pm \nREGISTER FOR CLASS  \n\n\n\nGREEN LAKE VILLAGE PCC\n\n\nMonday\, January 22\, 6:00 – 8:00 pm \nREGISTER FOR CLASS  \n\n\n\nISSAQUAH PCC\n\n\nMonday\, February 12\, 6:00 – 8:00 pm \nREGISTER FOR CLASS  \n\n\n\nREDMOND PCC\n\n\nSunday\, January 21\, 4:00 – 6:00 pm \nREGISTER FOR CLASS
