DESCRIPTION:The cold days of winter deserve the warmest of comfort foods and the coziest of gatherings. In Palestine\, that all centers around maftoul\, a traditional Palestinian couscous\, steamed to perfection with olive oil and broth. Paired with tender roast chicken and crowned with a sauce made from tomato\, onions\, and garbanzo beans\, this dish is the ultimate in winter comfort. You’ll enjoy your maftoul with hwerneh bil labaneh (mustard greens fermented with labneh); adas mudamas (mashed brown lentils with garlic\, lemon\, and an array of aromatic spices and herbs); crispy onions; and freshly made pita bread. You’ll finish the meal with asaba’ zeinab (fried semolina macarons bathed in orange blossom syrup). \nPlease note: some classes can be adjusted for students with dietary restrictions\, but many cannot. If you’re vegetarian\, pescatarian\, or gluten-free\, you can use the drop-down menu on our events page to view the best classes to fit your needs.
