Flavors of Palestine: Maftoul – Cooking Class

The cold days of winter deserve the warmest of comfort foods and the coziest of gatherings. In Palestine, that all centers around maftoul, a traditional Palestinian couscous, steamed to perfection with olive oil and broth. Paired with tender roast chicken and crowned with a sauce made from tomato, onions, and garbanzo beans, this dish is the ultimate in winter comfort. You’ll enjoy your maftoul with hwerneh bil labaneh (mustard greens fermented with labneh); adas mudamas (mashed brown lentils with garlic, lemon, and an array of aromatic spices and herbs); crispy onions; and freshly made pita bread. You’ll finish the meal with asaba’ zeinab (fried semolina macarons bathed in orange blossom syrup).
